Hello? Are you there?

Hello, there!

So we’ve basically been so busy the past month that we neglected to update the blog… life is just more important! When we started the blog we wanted it to be something that we could use as a means of communicating what we’re up to with family and friends, and also a way for us to keep a journal of memories and happenings in our lives.  We’re just 11 days away from our big move to Greenville, and 7 of those, we’ll be in Chicago. We move the day after we fly back!

Nothing like sweet tea

Last Saturday while so many across the county were sipping Mint Juleps and watching Calvin Borel win his 4th Kentucky derby on Super Saver, we were watching something much more amazing, Greenville Rotary Club’s KenDucky Derby.

The goal of Greenville’s derby is to send 10,000 ducks flying over the Reedy River Falls in downtown Greenville while benefiting local charities including: Greenville Area Interfaith Hospitality Network (GAIHN), Mauldin Miracle League (MML), and Ready4Reading.  While the ducks and waterfalls are reason enough to show up, the fact that it benefits some amazing charities make the event even more special.

It takes place yearly in falls park, where the ducks are corralled and then released to float over the falls and on to the finish line.

As you can see, thousands showed up to witness the spectacle with the winner taking home the grand prize: 1 year of free groceries from Bi-Lo.

Lindsey and I chose to play the odds and order a “Quack Pack” (6 ducks for the price of 5), and while we didn’t win, I’m sure our ducks were so close to winning.  There’s always next year!

Every spring, 1 week after the Cooper River Bridge Run, an amazing thing is reborn in Charleston, the Charleston Farmer’s Market in Marion Square.

Aside from an amazing way to spend wandering and people watching on a Saturday morning, the farmer’s market also saves the world! How you ask?

Well, the Charleston farmer’s market is comprised of booths from many local farmers who use environmentally friendly practices when bringing their fruit, vegetables, meats, and cheeses to bear. When you buy locally, you drastically reduce the amount of petroleum involved in getting that fruit, veggie, meat, etc. to your dinner plate.

Many will say, “the food I eat can’t make that much difference in the amount of gas consumed in our country.”

The truth is that in the United States, our food industry actually uses 33% of the total gas consumed in this country! 33%! Over 1/3 of the gas consumed in this country is fed into the agricultural pipeline that grows and delivers the food we eat to our plates. The food we get at the grocery store is essentially soaked in petroleum.

An easy way to combat this is to buy locally and buy foods in season! For more on this, read “The Omnivore’s Dilemma” it’s an amazing book that will open your eyes about the food you eat.

  2. Support local business ( you say that you’re tired of jobs going elsewhere? here’s a direct way to help a local farmer!)
  3. It’s a fun date (take the one you love)

  5. The food tastes better (food without preservatives, yum!)
  6. Reduce gas consumption
  7. Exercise (walk or ride to the market and you get double the exercise)
  8. Meet new people ( your local farmers are amazing people, go talk to them)
  9. Dogs ( farmer’s markets are full of dogs, bring yours too)
  10. Great Photo Opportunities!

Enough preaching, on to some photos!

There are more decisions and details related to wedding planning than I ever could have dreamed of! All of the big decisions have been made, so now it’s down to the small details. In my opinion, these are the most fun and personal touches to our special day. That said, I’m so excited to share one of my most favorite details for the wedding so far…

Instead of having the traditional ring bearer pillow, we are going to have a ring bowl! It is a design from a company called Paloma’s Nest! I found the idea online, and loved Paloma’s presentation and customizing options. I ordered their Custom Ring Bearer Bowl with the words “WITH THIS RING” and our date, “10.30.2010.” I’m absolutely in love with it… AND I know that I will use it daily after the wedding, which makes it even more special. It will be great in the kitchen or in the bathroom – a place for me to set my ring while cooking, washing my hands/face, getting ready, etc.

This is how it was wrapped. Boy was I ever so excited to open it!

Spinach Soup

Vaca is over… it’s now time to get serious about eating right and exercising more. I went to Costco today to restock the fridge with some yummy veggies and fruit. I ended up with a 40 oz bag of spinach… what the heck? I wanted  some lettuce, and the spinach was the cheapest and largest! While on my drive home, I began brainstorming some recipes to use it in. Tonight: soup. It’s really simple and nothing fancy. I enjoyed eating it, so I thought I would share.

Do you have a good spinach recipe?

Ingredients:

ʘ       Water

ʘ       Bullion (any flavor)

ʘ       1 Whole onion, chopped

ʘ       Mushrooms, sliced

ʘ       Salt

ʘ       Pepper

ʘ       Garlic Salt

ʘ       Red Pepper Flakes

Directions

  1. Heat as much water as you want to make for your soup. When boiling, add enough bullion to match the amount of water.
  2. Chop onion and mushrooms. Add to boiling pot.
  3. Reduce heat and let simmer until veggies are cooked.
  4. Season to taste with salt, pepper, garlic salt, and red pepper flakes.
  5. Add as much spinach as you want. I put about 5 or 6 heaping handfuls. Let the spinach wilt for a few minutes.
  6. Serve and enjoy!

Today, when I came home from work, I decided to make some pancakes with our Krustez batter from Costco. Unfortunately, Lindsey wasn’t really feeling pancakes, so I decided to improvise.

After doing a little searching, I realized that it is actually pretty easy to make biscuits from pancake batter. As I hate to waste things, I decided to give the pancake biscuits a try.

The recipe was very simple:

3 cups pancake batter

1/4 cup melted butter

1/3 cup water

1 egg

1 tsp baking powder

1 cup cheddar cheese

1 tbsp. dry mustard

Mix all ingredients together and then place biscuits evenly spaced on a non-greased cooking sheet

Bake in a pre-heated 425 degree oven for 10 – 12 minutes

They couldn’t have been easier! I had reservations due to the fact that I grew up on “homemade” bisquick biscuits that were usually dry and tasteless, but these biscuits were wonderful. We’ll definitely be making these again soon.
